Ingredients for Orange -Carrot Cake:
- 1.5 cup maida/ All purpose flour.
- 1/2 cup castor sugar.
- 1/2 cup butter at room temperature.
- 1 cup orange juice.
- 3 eggs.
- 1/2 cup grated carrot.
- 1/2 tsp cinnamon powder.
- 1/2 tsp baking powder.
- 1/4 tsp soda bicarbonate.
- 1 tbsp orange rinds.
- 1 tbsp orange pulp.

- Sieve together maida,soda bicarb,baking powder and cinnamon powder.Keep aside..
- Blend together,butter and sugar.Add orange juice.Add eggs one by one,blend.Add grated carrot and orange pulp also..
- Add maida mix portion by portion to the butter -egg mixture,fold.Add whole maida and fold.Add orange rinds,fold..
- Transfer to a greased mould,I've used a silicon mould so there is no need to grease..
- Bake in a preheated oven for 25 minutes at 180°c..
- Take out the cake and cool on a cooling rake.Serve warm..
