Ingredients for Lemon and Orange Cake Glaze:
- Peel from 1 large lemon.
- Peel from 1 large orange.
- 2 1/2 cup sugar.
- 1 cup cold water.
Step by step how to cook Lemon and Orange Cake Glaze:
- Wash and peel the lemon and orange with a vegatable peeler..
- Cut into very thin strips and place in a medium sauce pan with water..
- Bring to the boil (about 5 minutes if you put in there very little water in the pan).
- Take off the heat and let it rest for about 15 minutes..
- Strain the zest under cold water and let it drain the water off in a sieve. Place the zest to one side..
- In another sauce pan add one cup of white sugar and one cup of brown sugar with a bit of the boiled water used to boil the zests. Bring to the boil and let it simmer down stirring continuously..
- After about 5 minutes. Add the zest to the pan along with some more zesty water. Keep stirring otherwise it'll burn and bubble over the pan.
- This roughly takes about 30 minutes however mine too a lot longer because I added extra sugar for a cake I was making.
- I had to add a small amount of extra water when I reheated it to be able to spoon it onto a cake so if you want to spoon it on to a cake straight away make sure the cake it already cold because it will harden almost immediately as soon as its off the heat..
