Ingredients for Semolina Cornmeal Pizza:

  1. For Pizza dough-.
  2. 1/2 cup wheat flour.
  3. 1/2 cup semolina.
  4. 2 tablespoons corn meal.
  5. 1/2 teaspoon salt.
  6. 1/2 teaspoon brown sugar.
  7. 1/2 teaspoon active dry yeast.
  8. 1 tablespoon olive oil.
  9. 1/2 teaspoon Rosemary.
  10. 1/2 teaspoon Oregano.
  11. 1/2 teaspoon Chilli flakes.
  12. For Toppings-.
  13. 1 onion sliced.
  14. 2 tomatoes diced.
  15. 3-4 slices zucchini or any veggies of choice.
  16. 5-6 black olives.
  17. 1/2 cup Crushed fresh homemade cottage cheese.
  18. 2 tablespoons oil.
  19. 3-4 tablespoons mustard sauce.
  20. 2 teaspoons Pizza seasoning.

Step by step how to cook Semolina Cornmeal Pizza:

  1. In a mixing bowl mix all the flours, salt and seasonings..
  2. In another bowl take half cup water, brown sugar and mix with Yeast, set aside for 5 minutes, for the yeast to froth..
  3. Add one tablespoon of oil to the flour mixture..
  4. Add frothed yeast mixture and mix with a spoon..
  5. Add more water if required and prepare a soft dough..
  6. Knead for 5-8 minutes on the kitchen counter, using few drops of oil..
  7. Grease the bowl with drops of oil and leave the dough, covered in it for 10 minutes..
  8. After 10 minutes divide dough into 3-4 parts. I am using 3 pie trays of 3 inch and 1 of 5 inch.
  9. Preheat oven at this point at 220°C..
  10. Roll out dough to 1/4 inch thickness and place at the bottom of the greased trays. Prick with a fork, so the dough doesn't puff up too much while baking. Brush some oil on the pizza base..
  11. Apply mustard sauce or pizza sauce, spread cottage cheese over the sauce. Place any veggies or toppings of your choice. I have spread some onion slices, tomatoes, zucchini and chopped olives. Sprinkle some pizza seasoning on top for extra flavors..
  12. Bake in preheated oven for 15-20 minutes..
  13. Serve hot with some extra mustard sauce and indulge in healthy blend of deliciousness..
