Ingredients for Orange Cake:
- 1.5 Cups Flour.
- 1 tsp Baking powder.
- 1/2 Tsp Salt.
- Pinch salt (For whipping the egg whites).
- 1/2 Cup Oil/ Butter.
- 3/4 Cup Sugar (Preferrably Castor - granulated will also work, can be grinded).
- 2 Large Eggs or 3 if Small.
- 1/3 Cup Freshly squeezed Orange Juice.
- 1 Tbsp Orange zest (Be gentle to get the zest not the pith - white part).
- 1 tsp vanilla essence.
- Orange Glaze:.
- 1 Cup Icing sugar.
- 1/4 tsp Orange zest (Optional).
- 4-5 Tbsp Freshly squeezed orange juice.
Step by step how to cook Orange Cake:
- Separate yolks from whites. Set aside in separate bowls..
- Sift flour with salt and baking powder. Set aside..
- Preheat oven to 170C and grease your tin..
- Cream butter with sugar. add yolks one a time while beating each time..
- Add orange juice and zest and beat. Then add flour. Set aside..
- Clean/Wash your whisk and dry well. Then in a separate bowl, whisk egg whites till frothy, then add a pinch of salt and keep beating till it forms stiff peaks..
- Now add, 1/3 of the whites to batter and stir in in with a spatula or wooden spoon. Then add half of the balance whites fold it in, then the remaining whites and mix it all till incorporated. Dont overmix..
- Pour batter into baking tin and bake for 25- 30 mins. Cool completely..
- Glaze: Sieve icing sugar, add your zest and juice till reaches a drizzling consistency. Then drizzle over cooled cake. Enjoy!!!.
