Ingredients for Creamy Potato Salad:
- 5-6 medium sized potatoes, peeled and cut into bite sized pieces.
- to taste Salt.
- Handful chopped chives.
- 2 tbsp salad cream.
- 1 small onion, finely chopped.
- to taste Ground white pepper,.
- 3-4 tbsp mayonnaise.
- Ground black pepper (optional).
Step by step how to cook Creamy Potato Salad:
- In a pot of salted water boil the potatoes until tender but still holding their shape (approx 6-10 minutes)..
- Drain well the potatoes and allow to cool. I ran mine under cold running water to speed up the cooling process..
- Once cooled place the potatoes in bowl and add the onions, mayonnaise, salad cream, pepper and salt. Gently stir everything together. Add more seasoning if needed..
- Cover the bowl with clingfilm and place in the fridge for a minimum of one hour up to 24 hours..
- Just before serving add the chives in and combine everything together again..
- For decoration sprinkle with a a little more chives and a little ground black pepper..
