Ingredients for Cold Potato Salad:

  1. 2 potatoes boiled.
  2. 2 tbsp boiled kala chana(black chickpeas).
  3. 4 tbsp hung curd.
  4. 1 onion chopped finely.
  5. 1 tomato chopped.
  6. 1 tsp coconut chopped finely.
  7. 1 tbsp cilantro chopped.
  8. 1 tsp chaat masala.
  9. 1 green chilli chopped finely (optional).
  10. 1/4 tsp red chilli powder.
  11. 1/4 tsp black salt.
  12. 1 tsp roasted cumin powder.
  13. 1 tbsp aloo bhujiya (crispy potato sticks).
  14. 2 tbsp sweet and sour tamarind (imli)chutney.

Step by step how to cook Cold Potato Salad:

  1. Soak black chickpeas overnight or atleast 5 to 6 hours.Pressure cook chickpeas with little salt and 1/4 th cup water,4 to 5 whistles or till done.Boil potatoes and slice them into semi circles.Assemble all ingredients.Chop onion,cilantro.Make a tangy sweet and sour tamarind chutney by boiling tamarind with little salt, sugar,red chilli powder and roasted cumin powder.Add 1 pinch red chilli powder and 1/4 th tsp cumin powder to curd.Add 1 tbsp water and mix well..
  2. Mix all ingredients in the sliced boiled potatoes.Toss well.Sprinkle pinch of red chilli powder and cumin powder.Then garnish with chopped coriander (cilantro) and aloo bhujiya. Serve chilled healthy potato salad..
