Ingredients for Bombay Potatoes:

  1. 5-6 medium sized potato cut into halves.
  2. 3 tomato.
  3. 6-7 garlic cloves.
  4. 1 inch ginger.
  5. 2 green chili.
  6. 1 onion, sliced.
  7. to taste Salt.
  8. 1 tbsp oil.
  9. 1/2 tsp cumin seeds.
  10. 1/2 tsp mustard seeds.
  11. 1/2 tsp Red chili powder.
  12. 1/2 tsp turmeric powder.
  13. 1/2 tsp coriender powder.
  14. 1/2 tsp garam masala powder.
  15. leaves Coriander.

Step by step how to cook Bombay Potatoes:

  1. Put the ginger, garlic, tomatoes into a food processor untill smooth. Set aside..
  2. Put the potatoes in a large saucepan, boil for 8-10 minutes on medium heat, until just tender. Drain and set aside..
  3. Heat oil in a non-stick pan. Add cumin, mustard seeds fry for a second add onion, salt saute for a minute add green chili & all the spices stir well..
  4. Now add tomato mixture mix well and simmer for 2-3 mins, then stir the potatoes cook for 3-4 minutes..
  5. Garnish with coriander leaves Serve..
