- 2 cups diced brinjals.
- 1 1/2 cups diced potatoes.
- 1/2 cup peas.
- as per taste Salt.
- 5 tbsp oil.
- 1/4 spoon asafoetida.
- 1 green chilli.
- 1/2 tsp mustard seeds.
- 1/2 tsp jeera (cumin).
- 1 tsp red chilli powder.
- 1/4 tsp turmeric powder.
- 1 tomato chopped.
- 3 tbsp chopped coriander to garnish.

- Ensure that brinjal dices are slightly bigger than potato dices as brinjals get cooked faster than potatoes. Heat oil in a pressure cooker. Splatter mustard and jeera. Next add asafoetida, turmeric and Chilli powder. Quickly add the veggies in it. Add salt and combine everything well..
- Add tomatoes. Saute until the spices are cooked and the veggies release oil. Add water till the surface of the veggies..
- Bring it to boil. Taste and adjust seasoning if needed. Cover the cooker and wait for 2 whistles on low to medium flame..
