Ingredients for Orange Cranberry Loaf Cake:
- Fresh juice of 1 medium sized Orange.
- 1 Tb fresh orange zest.
- 150 gm dried cranberries.
- 150 gm walnuts.
- 200 gm all purpose flour.
- 1 pinch salt.
- 100 gm castor sugar.
- 2 Tb melted unsalted butter.
- 1.5 teaspoon baking powder.
- 1 egg.
Step by step how to cook Orange Cranberry Loaf Cake:
- Chop the cranberries and walnuts into small pieces.
- Preheat the oven to 200 degree celcius.
- Mix together all the dry ingredients in a bowl.
- Throw in the chopped walnuts and cranberries.
- Add butter,zest,orange juice and egg. Fold in well.
- Grease a bread loaf tin with some butter and pour in the cake batter into it and gently tap the tin twice or thrice.
- Bake for 15 minutes at 200 degree.
- Let cool and demould the cake.
- Slice the cake and store airtight. You can refrigerate the leftovers.
