Ingredients for Orange Cranberry Loaf Cake:

  1. Fresh juice of 1 medium sized Orange.
  2. 1 Tb fresh orange zest.
  3. 150 gm dried cranberries.
  4. 150 gm walnuts.
  5. 200 gm all purpose flour.
  6. 1 pinch salt.
  7. 100 gm castor sugar.
  8. 2 Tb melted unsalted butter.
  9. 1.5 teaspoon baking powder.
  10. 1 egg.

Step by step how to cook Orange Cranberry Loaf Cake:

  1. Chop the cranberries and walnuts into small pieces.
  2. Preheat the oven to 200 degree celcius.
  3. Mix together all the dry ingredients in a bowl.
  4. Throw in the chopped walnuts and cranberries.
  5. Add butter,zest,orange juice and egg. Fold in well.
  6. Grease a bread loaf tin with some butter and pour in the cake batter into it and gently tap the tin twice or thrice.
  7. Bake for 15 minutes at 200 degree.
  8. Let cool and demould the cake.
  9. Slice the cake and store airtight. You can refrigerate the leftovers.
