Ingredients for Pan Meino/ Orange Cake:

  1. 2 each organic oranges.
  2. 1/4 cup lemon juice.
  3. 1 cup sugar (for glaze).
  4. 8 tbsp butter.
  5. 3/4 cup sugar.

  7. 1/3 cup semolina flour.
  8. 2/3 cup flour.
  9. 1 tsp baking powder.
  10. 1/4 tsp Kosher/Sea salt.
  11. 1 tbsp orange zest.

  8. Gently remove the slices from simmer and continue to reduce the syrup to about 1/2 cup for the glaze. Remove from heat and set aside..
  9. In a separate bowl, combine with dry ingredients: semolina flour, flour, baking powder and salt. Whisk well to combine..
  10. Combine butter and sugar with electric mixer..
  11. Add eggs one at a time to incorporate..
  12. Add reserved orange zest..
  13. Slowly add the dry ingredients into the batter..
  14. Pour batter into buttered cake pan..
  15. Top with orange slices..
  16. Bake for about 15 minutes. Then reduce heat to 350°F..
  17. Continue baking until the edges become golden and start to pull away from sides. (30 to 40 minutes).
