Ingredients for Healthy Potato Salad:
- 800 g Small new potatoes.
- Red onion thinly sliced.
- 1 Tbs fresh chopped Dill.
- 1 Tbs fresh chopped Basil.
- 1 Tbs fresh chopped Parsley.
- Dressing:.
- 3/4 Cup Natural yogurt.
- 3 Tbsp Olive oil.
- 2 Tbsp Milk.
- 2 Tbsp Wholegrain mustard.
- 1 Tbsp Dijon mustard.
- 2 Tbsp White wine vinegar.
- 1/2 Tbsp Sugar.
- 1/4 Cup Fresh chopped chives.
- 1/2 Tsp Garlic powder.
- 1/2 Tsp Onion powder.
Step by step how to cook Healthy Potato Salad:
- Boil the potatoes whole for around 10 minutes or until you can push a for into it. Be careful not to over cook them..
- Once ready chop them in half and add them to a bowl..
- Mix all the ingredients together for the marinade and pour over the potatoes..
- Give them a good mix and add the Red onion, Dill, Basil and Parsley. Give it a final stir and set aside in the fridge for a few hours..
